Is there any central location form which to assign what file goes with what in Panther? For instance, mplayer thinks it is the default .wmv player, I want to permanently change that to Media Player for all current and future .wmv files. i knwo some programs have a preference section that allows you to assign what does what with what. but both mPlayer and WMP are missing these.

You can change this setting in Finder. If you select a file of this file type and get info on it, then click on the 'Open with' triangle, there's a popup menu to choose an application for that specific file to open in (in this case choose Media Player). Then click on the 'Change All...' button and every file with that extension will open with this application.
