I have a 5 GHz Wifi router which my MBP connects to just fine, but I've discovered that my iPhone 4S lacks the proper antenna for this. Is there any way for me to have my MBP rebroadcast the 5 GHz signal as 2.4 GHz or something so that my iPhone 4S can be on Wifi instead of cellular data?

No, but you can follow this to share your Macbook wifi over Bluetooth to the iPhone.
