Hi,

I have a problem with my 2006 Mac mini running Snow Leopard. The Mini is sharing multiple drives on the network and those drives mount as separate volumes.
When I copy a file from one network drive to another, the file does not move directly to its destination. Instead it first takes a 'detour' through my MacBook which increases the copy time a lot. How can I change this behavior?

It is working as intended. If you want it to be faster, do the file manipulation directly on the Mac mini.
 
How are you sharing them (SMB, NFS, AFS)? You might try different methods to see if it make a difference. I think some newer version of NFS support Server side copy, but I have no idea if the Finder would take advantage of that feature.
