Should I Get a 2020 MBA or a 2019/2020 MBP?

Currently own a 2017 13" MacBook Pro i5

My uses:

Browsing
YouTube
Movies
Torrents
Plex Server

Possible in the Future:

Logic Pro
Video Editing for YouTube Videos

Which should I get? If the MBA, i5 or i7? 8GB or 16GB Ram? Just looking for opinions

I wouldn't get it, you'd actually be downgrading your display from a P3 to a SRGB colour gamut, and it'll be slightly dimmer, albeit with true tone. Also, your MacBook Pro has upgradeable storage (assuming it does not have the touch bar), while the new MacBook Air does not. However, if you do want 16GB of memory and would like to go to a quad core, the new MacBook Air with the i5 and 16GB is the way to go.
