I am unfortunate enough to have quite thin wrists. I want an ultra watch but it looks ridiculous on me because of the enormous size. Should I just accept my fate and stop dreaming of a smaller one? I’ve been waiting since the first one was released and even switched to Garmin now to get the features I want, but I miss the Apple eco system.
 
I don't have thin wrists (more like medium), but can't tolerate the size & heft so am wishing for a smaller model as well. In the meantime my series 11 is fine.

I have small wrists, 150 mm, and I have used the Ultra since the U1 came out passing through the U2 and now the U3. It has never bothered me and I think it looks spectacular. I prefer not to limit myself, if it doesn't bother you physically you should buy it. I love big watches in small wrists. In conclusion, super happy with my Ultra and I wouldn't buy a smaller one.
 
My wrist is also in the 150-155mm range and I love the Ultra.

That said: yes, give up on Apple making a smaller Ultra - it's been through three model years now. The Series and SE models have always had two sizes from their introductions. I just don't think Apple will do it. If they do, you can always resell the Ultra 3 to buy the smaller model.
 
You might want to wait for the first re-design of the Ultra which should occur this fall (if Apple sticks to the same pattern they have been sticking to with the Series Watches). That being said, I doubt we‘ll get a smaller Ultra, but maybe a slimmer one.
 
I have a small wrist also at 153mm. But I love my U3. Huge screen, Huge battery, 1Hz AOD refresh that shows seconds on Modular face. And the Action button.
If the size bothers you, you should enjoy a smaller watch. However, if what others think about what size watch is on your wrist bothers you, you are wasting your time.

I was happy with my Apple Watch 10, but switched to the Ultra 3 as I had to exchange it after I damaged the 10 surfing ((Apple replaced for free)
If the next Apple Watch matches Ultras water resistance I’d happily switch back because I liked how I’d forget I was wearing the Apple Watch but the Ultra’s weight is hard to ignore,

Aside from that, the Ultra’s additional features aren’t necessary for me, for example, battery life was fine for someone not wearing it to bed
