The new MBP's seem very good but if intel are releasing "Ivy-Bridge" in late 2011, would that lead to a re-fresh then and with the current unibody design ive heard it gets very hot and thats no good as i do at least 3-4 hours of heavy 3d work and hearing the fans kicking in all the time would **** me of, what do you guys think ?

Intel will release Ivy Bridge chips in early 2012. If you can wait that long, wait. If you need a computer now and want to use a mobile Mac, get the current MBP, as it is quite fast for your purposes. Maybe also look into a 2011 Mac mini (still unreleased) as a render machine, or even an older Mac mini.
