It’s the monogram complication in the California face. You just have to manually input the Apple logo itself in the Watch app in the monogram complication in California face. Here you go to make it easier for you. Just copy and paste this
Same for me. I had to restart my watch, to get the face to show up.
Despite what the Watch app showed, the watch itself showed a different colour scheme, but the right dials. Weird...

I thought the stripes not being even would bug my OCD side but it looks great.
How are you guys getting the rainbow California watch face? I updated to the new OS last night, but I just get Pride Analog or Pride Digital as options for the pride watch face.
You need both current OS on watch and iPhone and restart both devices.
The color is "Rainbow" but it's not available on all faces
As @techno-Zen said. Also, I had to restart my watch in order to get the colours on California and Numerals after the phone updated, even though they showed on the phone, they did not port onto the watch before the restart
