I jailbroke my Ip5 and IPad 4 no issues at all, but when I open Cydia on my iPhone I see where it says in green SHSH for 6.1 but when I open Cydia on my iPad nothing, does that mean with all the server traffic they did not get registered or do they just not show that way on the iPad anymore ?

It took about a week for it to show up on my iPhone 5

It has been hit or miss on both my iPhone 5 and iPad 3. Sometimes it will be there and then the next it is missing. I'm guessing Cydia's SHSH server is still catching up after the huge rush of newly jailbroken devices. You probably don't need to worry just yet. Check again in a few days and see if it's there.

If you are really worried right now, you can always try using the "Request SHSHs from Cydia" feature in TinyUmbrella. If it is able to get the SHSHs from Cydia, then Cydia definitely has them, even if it's not showing up on your device.
 
Same here, sometimes it shows up listed there sometimes it doesnt.
To really confirm what you have on cydias server you can also use redsnow.
