I used to be able to go into the songs option and select shuffle from the top of the list and it would randomly select songs on my iPhone.

Can I still do this, as I can't seem to find a similar option?

Go to My Music and switch to Songs view (use red-texted chooser in the middle of the screen on iPhone or on the top on iPad). Start playing a song. Tap on bottom-player-bar to enable full screen mode for player. On the bottom is Shuffle icon. Enable it.
 
Thanks! Slight more convoluted, but great to know I can still do it. Sometimes I just don't know what I want to listen too, and have been trying Apple Music when I have connectivity, but that's not always the case.
 
It requires more taps now, but it seems that it is the only way. I start driving my car about 5÷7 sec. longer, becouse of these UI changes (and not improvements, in fact). 🙂
