SHutting down apps in 3.0

I've searched but can't seem to find an answer. How do you completely shut down an app in 3.0. Originally you could hold the home button down for about 5 sec and it would completely shut down ipod, safari, mail, etc, but doesn't work on 3.0.

Hold down the Home button and Sleep/Wake button for 5 seconds. When the power off screen is displayed, hold down the Home button for an additional 5 seconds.

In 3.0, holding down the Home button for a couple of seconds is reserved for the Voice Control app (iPhone 3G S only).
