I also have installed mpv (Apple Silicon) installed via macports that also runs pretty smooth on my Mac mini.What would be silicon (universal) alternatives for:
1. Adobe Acrobat Reader (preview doesn't always work for all my docs)
2. Microsoft To Do
3. VLC

You need to update to their latest beta inside IINA app. It's version 1.2.0.> iina
IINA runs as Intel on my M1 MacBook air, I can't find a universal or native package.
VLC runs native/Apple, and I slightly prefer a few things in VLC over iina, though that very likely could be because I've been using vlc and am used to it.

I keep hearing this from friends but I stopped using iina in favor of VLC. It doesn’t say it’s a beta.
You just have to download from the GitHub release instead of their product page. I’m guessing they’ll update their product page soon.
1.2.0 is universal. 1.1.2 is not.

Apart from the universal binary, there is nothing changed from v1.1.2. Therefore, if you are using an Intel-based Mac, you may skip this update safely until we have prepared separate builds for different architectures.
