(honest - I tried to find the answer but came across zilch!)

Texting - everytime someone send me a text message or I sent them one, they get "attached" to the bottom of the string of messages that have already taken place between us - even if I or the other person is not using "reply".

Is there a way to start new text "strings". I tried going to a particular contact in my contact list and chose "send a text", but that added the message to the bottom of the string as well.

No... the separation is the time stamp. This is a feature because it shows up like an ongoing convo, sort of like iChat.
 
Like said above you can't seperate them In Differen. Text messages, they all continue like that.
You can always delete them though to keep it more simple if they get long.
