This may be a stupid question, but here goes...

I have a legit locked iPhone 3GS with AT&T. I also have my old iPhone 3G that I have jailbroken and unlocked.

I'm going to a concert tonight and wanted to use my old unlocked iPhone with the SIM card that is in my 3GS. All is working fine, but I was just wondering if any jailbreak/Unlock data will save on my SIM card from my 3GS.

As far as I know this wont happen because I don't think the iPhone writes to the SIM, but i wanted to make sure.

No, nothing is written to the sim other than address book entries and thats only if you manually copy it to the sim, the lock mechanism is part of the phone, and only libraries on the phone get patched.
