This has been confusing me for sometime now:

How do you know deselect and select all the arrows for the songs?

Simple, I know, but I can't figure it out.
 
Apple-click, as simple as that. Assuming you're asking what I think you're asking, which is frankly a little tough to decipher...
 
Isn't it option-click?
If you are talking about the little grey arrows beside each song, you have to go into preferences to turn them on or off.
 
There is a script for enabling / disabling selected tracks ( you can do this to all your tracks or just highlighted ones)
Can't remember where it's from though.
 
It's "command-click" to toggle selecting/deselecting all tracks currently showing, regardless of what may be selected.
