I bought this adapter:


And I have a mid 2015 macbook pro. I also have a SK Hynix P31 Gold 1TB ssd, and it will not fit (its not enough clearence for me to screw the ssd in).

If it won't fit, it won't fit.
Might be time to look for something else, or try to find an Apple OEM SSD that doesn't need an adapter...
 
I have always used and recommended the short Sintech adapters with no issues reported when using single and double-sided NVMe drives.
 
My Sintech is too big to fit a Samsung 970 EVO Plus. I have ordered up a Voila Reve M2 converter.
I'll update you guys when I have a result.
BTW.... Talk about nerves when swapping the drive out, even when using the IFixit instruction pages.

You're getting a short adapter, correct?
