It's been this way for a while, even before the iPhone X. You just press and hold the home button and talk as soon as Siri comes up, and then Siri will stop listening as soon as you release the home button.

I can vouch for this. You don’t have to wait for the screen to update or for the Siri go-ahead beep. Just press the side button and immediately start talking. It’s because Siri is always listening that this is possible. Nice find
