Ok folks, so I de-registered my iPhone 4S from our Panasonic home phone that I described in my previous post. I have since left the house, come back, used the phone via bluetooth in my car, and I now have no issues at home when trying to use Siri. She wakes up instantly now.

I guess I will not be re-connecting it to my home phone until iOS 5.1 comes out. And that will just be to test if 5.1 fixes the issue or not.

Thanks - solved the problem!

I too was having the exact same problem - 15 sec delay in Siri coming on.
I deactivated the bluetooth connection on my 4S to my home Panasonic phone and problem resolved. Thanks for the good info here!

I was experiencing exactly the same problem. Deactivating the connection to a Panasonic phone was an instant cure.
