Does Siri process the request on board the phone, or does it sent your voice to a server that analyzers the request and sends the result back to the phone.
 
Depends. If you ask Siri what the weather is like, it would need internet access. If you ask it what's on your schedule or to play a song, it wouldn't.

Doesn't the voice recognition layer still need internet access regardless of what you're asking it to do?
 
I'm pretty sure it does need internet access as most of the processing is done at Apple's farms, not on the iPhone itself.

i believe this is correct.
 
It may have some limited recognizing abilities, similar to the current voice control. But it may be able to read things like incoming text messages without an internet connection.
