I never cared for the Bedtime feature in previous iOS releases; I didn't like the mandatory bedtime notifications or that it was difficult to tweak for exceptions. I kept on using the classic alarm and Do Not Disturb.

With iOS 15 I tried the sleep focus and it has resolved the issues I had. The bedtime and wind-down notifications are optional, and it ties my bedtime and wake-up times to the sleep focus so I don't have to bother with scheduling separate alarms and Do Not Disturb schedules. If I have to get up earlier the next day or the next day is a holiday, I can change things just for the next day without mucking up subsequent days. I can also have no alarm go off on weekends but still have the sleep focus turn off so I'll get notifications if I'm sleeping in past the desired time.

I just wanted to point this out for the benefit of others who, like me, wrote off the Bedtime feature a few years ago and never looked at it again. I've been very happy with Sleep focus for the past week or so.

I don't see how everything you just described didn't work with the bedtime feature prior to iOS 15?

It was possible to not have an alarm just for the next day without create a separate schedule if it is an holiday. And you could also have sleep focus turned on without an alarm attached to it.

It's great that you love the new feature, but I don't get why you didn't like the older one.

I'd the same feeling reading the OP. All of that I already did with iOS 14 o_o
 
Heh, it's very possible that the last time I looked at Bedtime/sleep was even before iOS 14, hence why this seems new to me.

Either way, I'm glad Apple fixed the shortcomings. :)
