So... I'm just trying to prevent my new 2018 MBP from becoming like my 2016 MBP.

I'd always bring my 2016 around in a backpack to coffee shops, work, and while traveling. I never would shut it off when doing that. It worked at home, brought it through TSA and it stopped working at the terminal.

Questions is, would shutting it down completely be better for the computer?

I've always shut down completely when traveling, but do not fly much anymore.

I leave it sleeping till through security. Then if it’s going to be 24 hours or more until I need to use it, i’ll power down. Less than 24 hours I let it sleep.

Sierra was more efficient for sleeping than High Sierra in my experience. Hopefully Mojave can revert that, even if partially.

Does macbook-pro have a hibernate option?

Macbook should hibernate automatically when on battery after some hours of sleep (it will hibernate while it's sleeping by itself to save power).

There are probably settings that you can adjust that will turn sleep into hibernate, but I'm not sure.
