Is there any way to completely disable this? I turned it "off" in the settings, but 20 times a day I still get it shown due to the "swipe up from the bottom of the screen" gesture by my shirt/body which makes my watch face useless.i have an Apple Watch Ultra 3. Been using them since the original release day 1 of any Apple Watch existing - before it was known as Series 0 even.

The short answer is no.
I have "wake on crown rotation" turned OFF and it helps with the Smart Stack screen, still getting it but only maybe a couple times per day
 
Try switching off “allow live activities”. This shuts off the Smart Stack on my AW11.

I dislike Smart Stack as well & wish it didn't exist. Of course, the same issue would exist no matter what the up-swipe triggered (was Control Panel before Smart Stack).

Seems you're an Apple Watch veteran & the issue didn't exist with prior AWs. Do you think it's happening with the Ultra because it's larger?

No I had Ultra 1 and 2 before with no issues.
 
It'd be nice if Smart Stack could be turned off all the way. Back on the series watches I had it coming up all the time because the Digital Crown would get turned during everyday activities. It was really annoying. Since moving to the Ultra, no problem with it at all. Not sure if that's the crown guard or just less sensitivity when it turns. I've never really experienced a problem with it coming up from a bottom-of-the-screen swipe other than wishing that I could configure what came up with a swipe up.

I've had an Ultra since it got first released and smart stacks kept coming up which is why I posted the below, it has helped me quite a bit
