I have an older iPhone running iOS 10. If I'm able to jailbreak it and get Cydia installed, is it possible to edit my SMS messages? I want to edit text, dates and the number associated. This would be with a text, not imessage.

This, this right here is WHY people are against Jailbraking their phones. People use Jailbreak to get around limitations of an iOS device, like themes, tweaks and cool features that allows us to do more with our phones, rather than the opposite of what you're suggesting!

What you're doing is wrong and should never be done. I'm hoping that something like this doesn't exist.
 
There are apps that allow you to create fake SMS messages, but I haven't heard of any lately.
