My Mom has a 6 Plus and we wanted to get her the new AW6 as she's getting older and the fall detection feature brings with it some peace of mind. But I just saw on the website that watchOS 7 needs a 6S and newer to work. So does this mean that if we got her the AW6, it wouldn't pair with the 6 plus?
 
Happened to me last year. I had iPhone 6 and wanted series 5 watch. I bought iPhone 11.
Yeah I had the 6 and updated to the 11 as well. Still rocking the series 3. Hoping for a redesign next year to upgrade.
 
You could do her watch via Family Setup to get fall protection for her from my understanding.
That's probably true. But I would like her to get the other benefits as well (notifications, pinging her phone, etc). But that is a thought. Hadn't considered that. Thanks!

That’s an important point. One of the big things with family sharing is that everyone in the family sharing group must use the same credit card for iTunes purchases. So if you went that route that would mean that any purchases the OP’s mom made would be charged to the OP’s credit card.

I really doubt that the OP's mom is going to be buying much from her watch. The Apple ID assigned to/for her watch does not need to be the same as on her watch using this new watch management tool. The OP could always just get their mom an upgrade to a value price iPhone SE 2nd Generation (2020) very well priced options for a full iPhone / Watch upgrade.

The thing I feel is missing for older parents when using Family Setup is that some watch features and apps are not available: irregular heart rhythm notifications, ECG, Cycle Tracking, Sleep, Blood Oxygen, Podcasts, Remote, News, Home, and Shortcuts.
