For the Series 7, the "most crack-resistant front crystal" benefit is touted in multiple places on Apple's Website, with absolutely no indication that it's for certain watches or all watches.

Only on the "Compare all Models" screen, all the way down under "Key Differences", do we see some sort of clarification.

"Apple Watch Series 7 has the most crack-resistant front crystal yet. Aluminum models have Ion‑X front glass. Stainless steel and titanium models have sapphire front crystals."

So what is what here? Is the sapphire crystal of the SS and TI watched enhanced? Is the Ion X screen enhanced (and now dubbed as crystal)? Would that mean the Series 7 and SE models have different versions of Ion X?

Maybe I'm just daft, but this about as clear as mud to me.

should be every model, since it is just the way it was built that changed.

I think it is more crack resistant because they made it 50% thicker. Maybe they had to make it thicker due to the new display and now the smart marketing dudes were like:
Marketing dude 1:”s**t this fat a*s front crystal the engineers put in the S7 is a hard one to sell…“
marketing dude 2:”well, it is thicker than before so it must be harder to crack, right?”
marketing dude 1:”Genius! Never thought of that.. how we gonna call it?”
markeying dude 2:”It’s the most crack resistant front crystal we ever had! Boom (drops the mic 🎤)”

In the world of watches, "crystal" refers to what is covering the face. In terms of Apple Watch, that means the crystal is Ion-X Glass on aluminum models, and sapphire crystal on steel and titanium models.

So with SS we get even more sapphire for our money! 50% more! Apple is so generous!

Haha, meanwhile, all anyone cares about is that it doesn't scratch so easily... Way to deflect, Apple!
 
I won't dwell on the terms. Apple is known to taunt on many "new" terms used as marketing gimmics. Realistically the end user really cares is if the apple watch going to crack if it is dropped on concrete surface (sidewalk).

Chances is that if you wait a bit someone on youtube will do a video on crack resistance of Watch 7 and you can make the judgement at that time.

Apple is too loose with the terminology. Aluminum watches have Ion X glass, SS and TI watches have sapphire crystal, and the Series 7 has the most crack-resistant crystal yet... They use the term crystal in two different manners for the same product.

The point is moot, though. As someone earlier pointed out, "crack-resistant" is just a positive spin on thicker... I had my own wires crossed and was thinking of scratch resistance the whole time, which would be far more useful.
