I'm tempted to grab a 17" before they are done if that's the case.
Could buy it tomm and return next week if something I want comes out correct? Zero restocking?

You could always order a refurbished 17" from apple after the refresh. They'll also most likely be available from resellers for a while even if they are discontinued on monday.
