So I either have to order online and wait over a week to get my computer or I have to pay Apple to install my own purchased hard drive in order not to void my warranty?
 
Almost correct. Putting in your own hard drive will not void your warranty. However, if you damage anything by making such an upgrade yourself, whatever you damage will not be covered. Also, if you send the comp in for repairs, you'll probably need to swap the original drive in.
