I have apple care and I recently destoryed my watch I should be getting a new one soon it'll come boxed and stuff should I sell it boxed and get as much as I can for it as it will be mint condition ready for Apple Watch 2 would that be smart? Or do apple watches not really sell?

We don't know when an apple watch 2 comes. Maybe April next year, can you bear that?

if its a refurb, which is probable, it will not come with a new box, but a brown box that they will keep

I think applecare is not there to allow you to buy a Watch2, but to repair and you should be glad to get a replacement
I received a replacement for my Sport recently and it came in a white rectangle box which I could keep.

Yeah, you won't be getting the charger, band, etc.

Just a replacement watch module.
