as in a software item that would sit between the mac's built-in line input and GB and provide amplification appropriate for an acoustic guitar pickup. (I can get the signal into GB ok but could sure use just a bit more signal)
Has anyone ever heard of such an animal?

The problem you're seeing is in the hardware, unfortunately. To bring the signal up to a level where your Mac can make best use of it, you'll need a hardware preamp.

If you don't care so much about noise, you might try to find a way to normalize the signal once it has been recorded. This is the closest thing to a 'preamp' in software, although it's not a preamp in any sense of the word. It'll just boost the signal and any noise it contains. Still, it might be what you're looking for.
