On the Apple help page for Center Stage they show a control in Settings > Facetime. On my new 5th Gen 12.9' iPad Center Stage works in Facetime, but there is no control in Settings to turn it off...

I have 14.5.1 and did a hard reboot, but there is still no selection possible as shown in your OP.I am on 14.5.1
UPDATE: I did a reboot and now the control appears. Very strange since I am sure I rebooted the device at least once since getting it last week.
I had to open FaceTime and check a box about center stage. After that I let FaceTime run without calling anyone and got center stage to activate. The feature does work during a Zoom test, but I have yet to try FT.
After reading your post, I opened FT and like Zoom it was apparent Center Stage was working. I returned to the FT settings and there found the previously missing tab that was now marked active.I had to open FaceTime and check a box about center stage. After that I let FaceTime run without calling anyone and got center stage to activate. Then I rebooted, and the option (finally) showed up in settings.
