I have read the articles about embedding album art in iTunes for Sonos to find them but I am confused. Much of my artwork is for non-commercial recordings that I just paste into iTunes. Does anyone know how to best embed this so that Sonos picks them up?

I prefer manually adding artwork of a higher quality than iTunes downloads. Album Art Exchange is a good source of high-quality album artwork. Sonos should be able to pick up that artwork, as it's embedded in the file.

If I have already added the artwork, is there a way to embed it now so that Sonos picks it up?

If you've manually added the artwork, Sonos (or any other app) should pick it up. If it doesn't, you may want to check to see if there's a Sonos support site or forum that can help.
