Hello,

On my MacBook pro that's connected via HDMI to a monitor, if I try to adjust the sound the speaker icon with the dots for volume level comes up greyed out. The sound comes out of the monitor at an unchangeable level, unless I went into the monitor menu and fix it manually. If I instead connected with a DisplayPort to the monitor, would it fix the problem?

no, the problem will be the same.

I have an Eizo monitor connected via DisplayPort to my Macbook Pro, the speaker icon is greyed out an I can't change the level that way.

That would be because the monitor's DAC is taking care of the sound, not your computer. That's why you cannot adjust volume. That's 100% normal and expected behaviour.
