Spellcheck in Mail - US to UK

We are using Mail in Leopard and I can't seem to find a way to change the spell-check from US to UK English, to get rid of all those ZZZs and the like.

Can anyone help? -

The menu item you suggest (which i can see is correct) is greyed out and unavailable.
Any clues???
