Does anyone know, will the 11in behave like the 12.9 or the 10.5 in split screen? As in, can it run two full apps side by side like the 12.9, or only one full, one ‘mobile’ like the 10.5?

This is why I went 12.9. Would love am answer too. Maybe we'll know as soon as xcode is updated?

There you go. Unfortunately I see that in 1/2 split view, 11" iPad Pro has Compact width, regular height in landscape mode, which is the same as 10.5" iPad Pro

This is why I only go with the 12.9 Pro or 9.7 2018 iPad... the 10.5 and 11 cost more than the 9.7 but display the same content in split view.... oh, and if you use MS Office, you're going to have to pay for it to access the full version on anything larger than the 9.7 iPad... might as well have the largest screen. :)

There's definitely a change with the size classes on the 11". This video (screenshot attached) shows the 11" with the mail app open on the left, and the message app open on the right. The mail app shows the full mail, as well as the mailboxes on the left. My 10.5" doesn't do this - it just shows the mailboxes as a slideover.

Do you have a side-by-side screenshot with them in split view with the same apps?

Yes, that's different to my 10.5 too, looks like it can handle the mail app better in a ¾ split; but I'm also hearing no 50:50 split which is the only thing that I miss about the 12in really.
