I have running around 10 open apps.
I have about 6 open finder windows and several open windows for each app.

I would like to have open windows, that belong to the same application stacked in a fan, that pops open, when I run my mouse over it.

Is this possible?

At the moment my dock is a huge chaotic mess and I am looking too long for the right window to open.

A bonus would be, to sort the stacks after time of opening/ name/ finder path.
 
Unfortunately not. You could try hiding (command-H) or closing windows rather than minimizing them, though. Not to be insensitive, but who needs 10 applications and 6 Finder windows open at once?
 
Have you looked into using Spaces instead? As the previous poster said, the solution you're looking for doesn't exist, but it sounds like there might be a more efficient way of doing what you're trying to do. Using Spaces with a little bit of organizational preparation might go a long way.
