Every time I try to view a folder in stacks view it fans them out but I can not see the icon for each document or even the title. Has anyone had this issue or is there something in my settings I am missing?

If you right click on the stack, it'll bring up a drop menu. You can choose your options from that.
 
Maybe I was not as clear as I should be. Here is a screen shot of what is happening.

If you will look at the bottom right hand side of the screen where I have the documents folder selected, you will see that there is nothing readable coming up in the stacks. I can not see the title of any of the docs I have in that folder. Maybe I am doing something wrong.

I have it sorted by the following:
sort by - date added
display as - stack
view content as automatic

I have not had this problem on any other mac that I have running Leopard. Any ideas?
 
Drag it off your dock then add it again and see if that fixes it. Or repair Permissions/Verify disk and reboot.
