Having just taught a class at The University of Colorado in iPhone and iPad SDK, Objective C. many of my students found varying websites that had screencasts.
However, apart from doing the screencasts I also suggest that students get the basics down with Objective C on the Mac and COCOA on the iPad and iPhone SDK's by doing, in both of the aforementioned platforms, many variations of Hello Worlds, adding simple things like labels and button, switchviews all before doing arrays or working with SQL Lite.
