I have tons of pictures from the time with my ex. Feels like every other day photos app want to remind me of her. Is there a way to select which picture should/should not be displayed in memories/featured photos?

There should be an option when you 3d touch or force touch the Memory that has your ex. Its called “Suggest Fewer Memories like this”. Give it a go.
 
You can go into the People section in Albums, go to that person, radio on them, tap on the 3 dots and hit ‘suggest XXX less’

Or maybe get rid of the tons of photos which show your ex. If you keep them, then they are probably memories you are not ready to get rid of just yet.... If you leave a box of photos under your bed and occasionally run into them, you really can't blame the bed, only yourself for not trashing them.

Could put them in the Hidden Folder, best of both worlds. Get to keep them, but not accidentally stumble into them or have them pop up in memories :)

I am reasonably sure it is not an option for you to just take those photos off the library?
