Stop openin recently closed files?

Preview and QuickTime are always opening recently closed files when I launch them in Lion, it looks like it's a default option not only for them but for a lot of other apps...

Any idea on how disabling it?

Go to General in system prefs and uncheck "restore windows when quitting and reopening apps"
