Stopping watch going into a dimmed mode after bedtime

AW6 seems to go into a quiet mode with screen dimmed and only showing a digital time with large vertical numbers every night. Don’t mind this but it won’t let me wake it seems to be related to night time bed time. And iPhone does same how do I stop this happening as phone is on a do not disturb mode and I need to be able to access both

To access the watch during sleep mode, tap the watch screen and then roll the crown several times until the watch wakes up for full access.
