I did an order for store pickup online via apple online store for my sister some AirPods wireless and iPhone but I won’t be able to pick up today can I pick it up the next day ?

I did the same, but I picked my XS Max 4 days after I placed the order. You have 7 days.

The Apple Store will hold it for 21 days. After that, they will cancel and refund the order.

Yes, you should be fine to pick it up the next day. Apple Store will typically hold it for 14-21 days and will cancel and refund you the money.
