Studio Building, wall plates and interconnects?

    I need to get some cables off the floor. The plan is to install two wall plates about 20 feet apart. These are for line level signals some balanced and some single ended and MIDI. None of this is for mic level.

    I'm undecided about the kind of cable and connectors. I'm thinking of using 1/4" TRS phone jacks and standard mic cable between them. I wonder if XLR is not a better connection. Does this work for well for a standard consumer single ended signal. People mostly use coax for consumer home stereo.

    The other idea was to install Cat5 wire and put RJ45 on the wall plates. then make adaptors as required. One cat5 cable has four pairs inside. Have people used Cat5 wire for this?

    Maybe there is some way that "everyone" does this and I shouldn't have to figure it out. I'm happy to follow the conventional "best practice" -- If only I knew what this was.
