I have a Studio Display hooked up directly to my MacBook Pro Max (Ventura). In displays settings, there is no option to set the refresh rate but all Apple instructions indicate that this should be an option?

Why do you want to change the refresh rate? Are you trying to get 50Hz or 48Hz or 30Hz or 25Hz or 24Hz?

All the modes in the EDID of the Studio Display are 60Hz. In that case, the Displays preferences panel will hide the refresh rate option.

If you had an Intel Mac, then you could try adding custom timings using SwitchResX to see if the display supports different refresh rates.
