I have in the past done various upgrades to Mac Mini models of yore, and this time around, I am considering having someone else do the work as I am unclear if I can do the job without damaging the wire plug ends or more likely challenged to re-seat them upon putting the Mini back together.

I notice that OWC doesn't offer the service for the latest Mac Mini. Will Apple Store do it with 3rd party memory and does anyone know the cost OR - is there a 3rd party that can do this akin to OWC?
 
I can encourage you to try do it yourself. I am really NOT a gifted tinkerer, and I do have to admit that all in all it took me a solid hour, but I was able to accomplish everything and the RAM upgrade worked nicely.
There are some really thorough videos/posts with step-by-step instructions out there, and the necessary screwdrivers can be ordered cheaply.

Just be careful, take you time, be gentle, use the recommended tools and double check all the connections before moving to the next step when putting it back together.

As stated below, I don't feel confident that I'll unseat and re-seat properly and make break something. I do have to grin given my ancient history of building PCs pre dating the Intel 386 on up to about 15 years ago. Let's just say Windows was not on the scene yet.

If I could get very close up video of the unseating and re-seating of the wires, it would go a long way. I have done older Mac Mini models that were a bit more challenging, and on one the ir connector and socket got damaged (as the instructions were not clear on how to unseat). This is a matter of not feeling confident at all. I do thank you for the advice.

Twice good! Yes, very good close ups and clarified at least two of the cable connections and made me wish that my late Mom was around to help translate as she spoke fluently and well...I just know a hand full of words. No matter, the video was worth a thousand words in Englisch oder Deutsch. Again thanks!

Also, consider getting the iFixit tool kit. I got this one and the only bit it doesn't have was the t10 which is in most ordinary tool kits. About £17. The tweezers and prying tools as well as the smaller bit heads made the job a lot easier!
