I have ATV 3. It is connected directly to an Onkyo 5.1 unit via hdmi. I usually set my Onkyo on TV Logic or Dolby Surround.

When I watch Spectrum TV app, I am only getting sound from the front speakers. I realize that 5.1 surround is not available when I'm streaming cable tv, but what is the best way to get sound from all my speakers. Is setting my Onkyo on All Speaker Stereo the only and best way?

I don't like it just coming at me from the front speakers.

All speaker stereo is a surefire and foolproof way to also get front stereo channels mirrored to back channels.
If your Onkyo supports DTS Neural:X then that one creates more pseudo-surround-like upmix for you.
 
I think I knew about DTS Neural:X at one time and forgot :) Just checked, I have it and it sounds good. Thanks. BTW, I have the ATV set to Auto for sound format. I'm guessing I just leave it on that.

Yes, if you change it to Surround, it will only output a legacy Dolby (not Plus) signal that isn't as good as the default LPCM.
 
If the source/AppleTV app is only sending stereo not surround, then the ATV won't do anything to make it come out all speakers. It's sending pure stereo. It's up to your receiver to do whatever it does with the stream. If you want a stereo source to come out of all speakers, you need to find your receiver's option for "expanded stereo," "virtual surround," or something similar.
