I’m contemplating switching from AT&T to Verizon to get better coverage in my area. Being on the IUP program, I upgraded when it launched, to the 11 Pro Max, on AT&T. Having never switched carriers, what is the best way to go about making the switch? Can I do this online through Verizon or should I visit a store? Can I use my current Pro Max when making the switch?

Previous poster is right, you can probably do it via Verizon app with eSIM. If it were me, and a Verizon store was close, and I was under an AT&T contract, I'd probably visit the Verizon store to ensure my cell number got ported over. But it shouldn't be an issue if you try it at home, especially if you are under Apple's IUP and you don't have an AT&T lockup period. So, go through the Verizon app.

Can I use my current Pro Max when making the switch?
This is the benefit of Apple's IUP program. Your new Max will be unlocked, as will any iPhone you get from Apple under IUP. Hence you can switch to any carrier basically anywhere in the world, at any time. Though if you are traveling overseas and you want local cell service, use your new iPhone's DualSIM tech, get a local nanoSIM, and keep your Verizon eSIM.
 
If I were you I switch with the app. and get 250$ for that later. You go to the store you get 100-150 max. Free money (hopefully un-taxed) are always good. :)

I am also switching from AT&T to Verizon. AT&T recently did some "upgrades" in the area where my office is and the signal degraded to the point where I am no longer getting a data connection inside the building. Unfortunately, the WiFi in the office is just as bad, while Verizon gets excellent service.

Has anyone tried using the GSM version of the iPhone X on Verizon? I'm aware that it won't connect to CDMA (a moot point, since Verizon is in the process of shutting down CDMA), but are there any other service issues that I should be aware of?
 
If you have an iphone 11/11 pro max/11 pro, I would go onto Verizon's website and make sure the sim is compatible. The new phones are unlocked, but if you bought it with an ATT sim card, Verizon is not recognizing the phone as compatible with their network - there was some type of issue with their systems not recognizing the sims. This was a huge issue during release week. I decided to switch carriers after I got the 11 pro max and it was the biggest clusterF%#K. It took me 8-9 hours on the phone and 2 hours in the store to get it rectified.
 
Well, I have an Apple branded XSM I paid full retail for when it came out. It’s unlocked (I put in a request just in case) but cannot sign up for a eSIM with the My Verizon App as the eSIM IMEI is not whitelisted in Verizon’s database. I just moved my AT&T to eSIM and will now get a regular Verizon SIM.

If you do Verizon online chat they will be able to turn on your eSim. They just need your IMEI number. I’ve done it multiple times (long story...) but it works.
