Hey!
I've just ordered an 8GB iPhone 3G through the O2 online store. After say, 2 months, I decide I want to change to the 16GB model, can I do so by going to an O2 store, and paying the difference of both models, while keeping my contract?

none. your only option will be to buy the 16gb on PAYG and swap your sim.

I'd check out your options sooner rather than later - an O2 store will be able to help. potentially ;)

nope.... i think you have either 14 or 30 days to return the 8Gb phone.... but i'm almost certain that you'll be locked to the 8Gb for 18 months (the same as any other phone)
