Currently I just have a 320gb HDD that apple shipped with my Mac Pro, but I would really like to have a mirror just incase. If I purchase a second 320GB am I able to build the RAID mirror with my current install or do I have to reinstall the OS, etc?

I have a similar question

I just setup two spinpoint F1 1TB drives in a software mirror config, and I wanted to know if one of the drives dies, can I just pop in another 1TB drive to rebuild the mirror without formating and reinstalling?
 
Just install and mirror it.

Yes, just replace the drive and have it rebuild the mirror.
