I'd like to use both Apple Watch 8 and Apple Watch Ultra with one (1) cellular plan without paying a fee. Not sure if it's possible but I'd like to Switch back & forth when ever I choose (maybe daily or weekly) I have T-Mobile as my service provider.

Anyone with any experience in doing this?

I don’t think this is possible. I believe you have to activate each device from the device and they both have different ID numbers. I doubt you want to call them daily to switch back and forth.

I have three Apple Watches on my T-Mobile plan that cost $5 each. You need to give them the 32 digit EID number of the watch. Of course each watch has a different number so you would need two plans. Considering I was paying Verizon $13 for each watch, this is a good deal in my opinion.

I see there are two different plans on T-Mobile one is $5 and the other is $10 which is the one I currently have. The $10 is for unlimited and the $5 is limited to 500MB. So what's the difference between the two plans other than the data plan? Can you make unlimited phone calls on either plan when not tethered to iPhone.

OK I apologize as I didn't know about the $10 plan. I'm on the Magenta 50+ plan so I thought they were all the same. I can make unlimited calls but I am limited to 500MB. That doesn't bother me as I only use my watch for the occasional text or call when I'm outside working and don't want to have my phone in my pocket. If you check T-Mobile's website it should have the details on the $10 plan.

With Visible, I was able to switch back and forth between two watches. I forget exactly how it worked (only have one watch now), but I think there was a prompt warning that only one watch can be associated with the account. You can then choose to transfer your plan from one watch to the other. Took a minute or two to transfer and I was able to do it several times without issue. Still only $5.

That's exactly what I was thinking.
And here's why....I recently bought my wife a new AW8 SS and when we unpaired her old AW we had the option to "KEEP CELLULAR PLAN" or "REMOVE CELLULAR PLAN", we choose to "Keep Cellular Plan". In the pairing process of the the new AW8 SS it ask if we wanted to transfer cellular plan to the NEW watch which we did. And it worked without a hitch.
