My wife has an iPhone 3G and i have an iPhone 4. She has the original unlimited data plan and I am stuck with the 2GB plan despite the fact that I use a lot more data than her. If I were to switch the SIM cards (I've already ordered an adapter to get my SIM in her phone and I will cut her SIM down), will that switch the data plans?

If you switch sims you are not only switching the data plan, but switching the whole phone plan and number attached to it. So you now have her number and she has yours.

So yes you get your unlimited, she has 2gb.
