If it were me, I'd wait just considering that it will definitly be supported for the forseeable future, plus your software is coming out in may anyway, so you wont take a performance hit.
If you get a very good price for your PPC Mac then I would buy that. PPC appls will still be supported throughout Leopard (or at least that's what I'm thinking)
You shouldn't worry if your PPC will be obsolete anytime soon... they will be workable for many years

I would suggest not upgrading RAM through Apple, they charge way too much for it. I would get it stock RAM and then buy more from Crucial.com, or newegg.com, it's an easy way to save some cash.

I agree about the ram from apple, I would also try macsales.com to buy your ram. That is where I bought my ram for my G5 and it works great and is the easiest upgrade you can do for your system.
